Winter ambient is easy to find, can't think of anything forest-themed though... Maybe with forest field recordings; perhaps with some wooden instruments/percussions too, if used sparingly? I'd be interested in that.

Rain Drinkers also have a very "natural" sound, partly because they use a lot of acoustic sounds and record some of their work outdoors. Not really cold though. All of the releases I've heard by them are good.

I've really been struggling with ambient lately, a lot of it is not to my taste. I like a bit of psybient (Ott) and a little bit of spacey music (AstroPilot) but it's pretty much one or two artist per sub-genre I like.
