The first album was the most subtle. I think it's good, but if you don't think so it's 'kay. However, "Strange Mercy" and "St. Vincent" (mainly "St. Vincent") show a way of intrincasy between the instruments that I rarely see in albums. The vocals sound more like "just one instrument" in the songs than "everything is build around it".

St. Vincent the album was the one that actually got me into her music. It's a 40 minutes filler free eccentric & catchy album. It's lovely.

It depends of what kind of music do you usually listen.
Because all her albums are quite short (around 40 minutes) I suggest you to check them all in this order: St. Vincent, Actor, Strange Mercy, Marry Me, Love This Giant (collab with David Byrne).
Her catchiest album is St. Vincent, IMO. Annieway, whatever you do, don't miss Actor.

Mellow indeed, I don't really think it's strange at all tho. It's nice but I thought it sounded a bit amateur-ish and that it needed more instrumentation. Wasn't a fan of her vocals on some of the songs either. (I know this sounds like I hated the album but I didn't.)

Some of her songs are catchy, others are less instant. You need a bit of patience because many songs of her will grow on you after quite some listens. She's the kind of artist that you can listen for years without getting tired of her music.
It's very easy to dismiss her as pretentious (she's actually a bit pretentious) but spend some time listening to her work and you'll see why she's so acclaimed.

Her music is comforting in an alien way, but then sometimes it's surprising abrasive. There's a lot of variety too while still maintaining her own style. No hate here.
