Why did she forget how to farm efficiently in this new episode? I get the message they were trying to get across but making her a dum dum at something she's been doing well her entire life just seems wrong.

Probably to emphasize what I wrote in OP: she can come up with solutions to things nobody noticed before, but at the same time she has a very convoluted train of thought which sometimes leads her to be more silly than she actually is.

And let's not forget the whole "Ah can do all things by mahself" story: she is the epitome of the overzealous thinker, working fine on its own, but having some issues when trying to involve somebody else in the thought process.
That's why the episode had the "Applejck fixes the steam pipes" thing: to make a comparison between a complex situation and a lot more easier one (=farming stuff). I.e. she can't relax and has to make difficult even things that weren't supposed to be difficult originally

In all fairness to AJ, there wasn't really anyone in the farm who could properly teach her how to manage the whole place to begin with.
Assuming her parents were at least alive long enough to teach Big Mac how to farm, I can't imagine the lummox is smart or verbose enough to have AJ learn the workaround, even more so that she's as stubborn as all hell. Not even gonna bother with the fact that Granny Smith is practically senile and half-insane.
I'm honestly quite amazed that they were able to make a living through strength of will alone. Though I do understand why their barn needs to repaired almost every damn time.
