Yes, you fly with your left hand. When landing or flying slow you need constant immediate and accurate control over throttle, carb heat, and flaps. It only has two sides for if you're fighting extreme aerodynamic forces and you need something to hold with both hands as your plane is torn apart by whatever hell winds you flew into.

Besides, navigation is actually easy shit if you pre plan everything. All you have to do is tune to a frequency, select a heading, and fly in a more or less straight line so you can turn and fly a more straight line. At least for VORNAV. GPSNAV is grape.
Just make sure that you can do sick ass steep turns and stall quickly during stall practice and you're pretty much golden.

As an A&P I suggest you look at the maintenance school books, which are FAA-H-8083-31 Volumes 1 and 2, FAA-H-8080-30, and the FAA-H-8083-whatever the powerplant books are.
