Applejack is a good character. She's in my opinion one of the funniest on the show, along with Pinkie and Rarity, and especially when interacting with those two.People just don't understand the concept of the straightman

Well, mainly because out of all the main cast, she's the only decent person out of all of them.
For example, Rainbow Dash is an arrogant cunt, Twilight is no better, Rarity is fucking vain and self-centred, and Pinkie is just outright annoying.
Other than Fluttershy, AJ seems more concerned about the people around her than herself. I've not watched every single episode, but as far as I'm aware not once has she committed a selfish act, other than that time when she was forced to have a sleep-over at Twilight's place with Rarity, and only because the vain bitch is too fucking annoying to stay in close proximity with for too long without wanting to do something equally annoying back to her as well.

That's one way of interrpreting it. However, remember that AJ promised the mayor that she will also get the money from coming 1st place in the competition, and thus can be used to repair the town hall. So, when she didn't, she was forced to stay until she earned enough money to pay for the repairs of Ponyville's town hall. So yes, her pride made her ashamed that she let down everyone back home, including her family by not winning the Iron Hoof competition. But, she was willing to pay for that shame for selfless reasons. The moral point of the entire episode is that one shouldn't be ashamed to admit one's failings, and neither is failing to keep a promise because of circumstances that is beyond your control. This is what AJ had done, and this is what AJ finally realised and accepted in the end.
You still want to claim that what she did was selfish? Take this for example. You have diagnosed with a terminal illness, and the doctor gave you three months to live, at best. You have a loving wife and two children, and they do not know of your dire situation. Tell me, what would you do? You could tell them, but watch them agonise every moment, dreading that moment when you die. Or, you could keep it a secret, carry on life as usual, thus you can enjoy and savour every moment with your family until your time has come. If AJ was forced to make such a decision, she would have chose the latter.
