Starlight meets another pony who made past mistakes and learns from them how to move on and open herself up to everyone, she finds it a lot better then having to be stuck in a castle all day 'learning' how to do this from books.
Twiggles is very upset as Trixie is 'manipulating' / 'distracting' her pupil and forbids Starlight to see Trixie who Twilight thinks is only going to cause trouble. Trixie although saddened by this is still determined to show both Twilight and Starlight that you can be a better person if you really want to be. putting on a genuine magic show for the fillies and ponies of ponyville.
Even though at first the reception is rather hostile, the ponies realise Trixie's magic is genuine and her act more kind and less boastful thus gains the approval and respect of the audience, Starlight even joins in and does a magic trick or two of her own, by the end the town is cheering as Twilight stares jaw dropped.
By the end of the episode Twilight apologises to Trixie for doubting that she had changed and wanted to manipulate Starlight and Starlight makes a new friend, Trixie accepts the princess of friendships apology and all just laugh the whole thing off starting a new leaf for all 3 of them and putting the past behind. roll credits

Why would she be so fucking adamant against trusting Trixie when she's already openly apologized for shit that was not within her control, AND considering the shit Starlight and Discord's pulled amounts to way worse yet they're forgiven at the drop of a hat?

It's not so much that twilight would be out of character it's more the fact that whoever the writer is will 9 times out of 10 entirely forget who twilight is as a character and probably make her spiteful towards trixie because 'muh Magic duel rival'
As the person who suggested the idea I can understand why you would think that twilight is out of character but at the same time looking at the actual episode synopsis it's hard to imagine twilight trying to act in such a way unless the character in question has indeed changed...

Consider the following: Twilight is trying to teach Starlight about friendship. She's also Twilight band very... by the book. Starlight meets say, Trixie, who while no longer a 'bad' pony per se and under any other circumstance Twilight would probably be neutral to at this point, Twilight would probably consider a 'bad influence' on her impressionable student that she's basically trying to resocialize from the ground up. She can't let Starlight have a backslide, after all. What kind of teacher has students backslide? A terrible one, that's who.
Remember, Twi's still seems pretty neurotic about the whole being a teacher thing from what we've seen in the premiere.
