For the same reason I look at gore/torture/horrible shit when I'm playing with myself. I don't specifically like what I'm looking at, but the stress of seeing such things is a potent catalyst for the other feelings.

Ponies do use violence as a display of dominance, but thats normally for very aggressive shit (stuff like pinkie pie constantly invading someones space might get her bit on the knee then smacked with a flank to let her know she's went to far)
Unless you have genuinely aggressive rival horses this fighting generally does not result in injury.
In all other instances, horses tend to control someones feet and move them in order to show dominance, so it's entirely possible that most mlp pones might inherit that trait, using their body language instead.
That said bitch slapping them isn't a great approach either, because too much attack and pressure makes them feel like you're a predator, not a herd member. Thats a great opportunity to get your head caved in. Horses are constantly scared of being eaten, thats why they fear new things so much. a shadow behind them on their peripheral vision is generally for kicking, as that is what has helped them not be eaten by ambush predators like us and big cats.

The best way to dominate a pony is to use pressure and release. Its not about abusing them, you need to reward them for the right option or they wont understand what you want from them.
