I still find it a little confusing. I've never heard the term "veggie salad" before.
I'd always thought that "salad" only needed a modifier if it was, in fact, not primarily vegetables. Like if it was tuna based or something.
If I'm missing something about the joke, don't hesitate to clarify it, because it's entirely possible that there's some crazy option here that I'd never considered.
