The trouble is, Sunset's smart and she's way more socially perceptive than Twilight. That worked in her favor for a while. As long as she thought friendship was worthless and power was all that mattered, she could justify anything to herself in pursuit of her goals. That probably made her feel like the most accomplished person in her world, hence her confidence and happiness as a villain. But as soon as she was defeated, all that knowledge and awareness turned back on her. She knew exactly how much damage she'd caused and exactly how much she deserved the treatment she was getting, and she was too rational to be able to deny it to herself, even a little. There's nothing better at breaking down confidence than unavoidable guilt.
As capable as Sunset is, she's still (figuratively) only human.

I believe you're misinterpreting what she became. Sunset has never been spineless or a timid loser. She made the decision not to stand up to people who she believed had valid reasons to dislike her, but note how she acted around her friends, particularly with the ongoing "no offense" thing. If she really was the Fluttershy 2.0 people claim, she would have just shown more fear and depression in response to hearing her past brought up. Instead, she appeared mildly annoyed but chose not to press the issue.
Sunset's actions in the second movie weren't the behavior of a person too afraid of judgment to approach anyone. She just recognized what she'd done and decided to bear the consequences of it, to not force forgiveness from anyone who wasn't ready to accept her yet.

In FG she becomes upset due to her lack of understanding of magic not because people don't like her.

I honestly don't know where this comes from you're making it sound like Sunset could be replaced with a brick wall and there would be no difference. Post EQG, Sunset has become one of the more complex characters in my opinion (at least with the screen time she's had).
In RR she is shown as being kind, willing to help and expresses sincere regret about her previous actions, even going as far as befriending former enemies. Midway through RR we see that she hasn't become a pushover with her outburst towards Trixie. In the final act of RR she points out that she lacks confidence in matters of friendship which is why she stayed quiet and this sets her on the path to regaining her overall confidence by the end of the movie.
This continues in FG with Sunset developing further with it being shown that she is deeply loyal to her friends and is determined to help and protect them despite her lack of understanding in magic in the human world. This shows when she becomes worried that she won't be able to work out how the magic works and that she won't be able to help her friends, this culminates in the explosive outburst directed at Sci-Twi, which she the regrets. FG also shows that she is a physical learner, actually going out and doing something rather than pouring over books.

Actually, the sympathetic loner child protagonist with a small but very loyal circle of close friends is a very thoroughly done archetype. If you were old enough to have seen this done over and over again in the late 90's and early 2000's, you would know this.

She's not complex. She's a blank slate. She might seem "complex" because she serves as a catalyst for the plot, meaning her "personality" changes as needed to fit that role, which I suppose could give off the illusion of complexity to someone who wants to believe that she is complex.
