Unicorn fighting focuses on the raw power. Both attack and defence have magical elements to it, and the horn could be a decent stabbing weapon at close range. Unicorn fights tend to be straightforward and quick, like a gunslinger's duel. Fighting stance is facing forward with horn lowered, ready to charge and overwhelm through sheer force.
Pegasis fighting focuses heavily on nimble flying and speed. Against an aerial opponent the goal is to outmaneuver and surprise. I wouldn't be surprised if they practice bird-like dive bombs. On the ground, wings are still used for balance and distracting the opponent. Pegasis fighting is flashy with lots of flight assisted jumps and dodges. They rely on quick jabs with all four limbs while dancing around enemies. Fighting stance has wings spread for quick use with legs tensed, ready to spring.
Earth pony fighting has neither advantage of the other two, so they master turning the opponents against themselves. They bide their time and wait for opportunities. Default fighting stance is a loose crouch to make themselves a smaller target and draw the enemy in for counterattack. They rely on their natural toughness to absorb a few hits, just so their opponent can get close enough to grapple.

The only martial art that has any real life applications is thai boxing - or Krav Maga, if you count gouging peoples eyes out as a martial art, and you don't mind getting thrown in prison for excessive violence - everything else is good exercise, but the techniques involved are mostly useless.
It doesn't take much to easily beat up two average people. I've beaten up more than that on several occasions, and I'm not martial arts champion by any stretch of the imagination. I bet any professional athlete of any sport could beat me up if they had to.

Really just study boxing and wrestling and you'll be far better off in a fight than any of those other martial arts (krav is good too) just don't play by any "rules" it's a fight not a honarable duel, the aim is to end it as quickly as possible and with minimal harm to yourself.
