Depends on your skill level. All FSS kits require certain levels of paint and glue, with the easiest ones being the Volks plastic models to the hardest being the very expensive resin kits.
Unfortunately, most of the best designs are only available as resin kits at the moment. Though I'm not sure how designs like this would even work in plastic.

I also noticed something about the Mortar Headds compared to the Gothicmades in how they were drawn in the manga. The MH had actual texture shaded into their armor, making them look more like stone statues. The Gothicmades look more plastic-y by comparison in B&W.

Good luck. Some guy on the Gunpla Generals documented his build process of the old 1/100 LED Mirage and basically had to modify half of it for it to even go together. Given how bad the old plamo was, I'm not at all surprised so many people jumped on resins instead.
