I would check out FSS is I were you. Under the 'mecha' section of Gears Online there is a nine page detail of the structure and skeleton of a mortarheadd.
Fascinating to read, I'd say its my own personal choice for best internals.

I'm adding AT VOTOMS. The designs are very nice, best part of it is the cockpit integration

If you find the AT VOTOMS RPG handbook, it has linearts of the interior structures. I have the PDF but its too big for upload.
