The original shield isn't intended for combat or to be disposable (or at least not until it has fired its nuke). It's a giant heat sink that sprays a coolant cloud around the ms to take the brunt of the heat from the blast. When Kou damages it they were pissed off because they can't safetly fire the nuke with it in its damaged condition.
This shield is just a standard, throwaway shield that Gatou can actually block with without trying to avoid damaging it. I don't know what the context of the scene in the OP is, but if he hasn't fired the nuke yet he'll definately equip the original shield for it. Especially since the shield holds the barrel for the nuke launcher in it.

Send a signal to the rack to deploy them, the weapons shoot forward and then the unit grabs them.so long as they're in space there'll be no gravity to make it difficult to calculate trajectory and miss them. And it's almost definitely a space use system.

I like the Ad Hoc stuff like the sturm faust rack, and the missiles on the back, but the rest of it's a bit much.
Like other anon's have said, it's designed battle role was to shoot and scoot with nukes.While GP-01 was to screen defenses for it, and be fast enough to be gone before the nukes fly.
Much like the Unicorn -- that's not "Full Armor". That's just lots of extra weapons.

Actually I'm not saying that at all - I'm saying that detaching the weapon from the rack so that it spills forward (which is simple to do) doesn't require anything more than pressing a button to do it and then reaching the unit's hand up to grab it when it's falling out of the rack. And that it's functionally similar to getting it off the waist. I'm pretty sure some Gundams have even done something similar with beam sabers, firing them out of shields or arm racks so that they can be grabbed while floating and then used. Keep firing insults if it makes you feel better though.

There's no grenades on it's shield though. There's grenades on it's shoulders, shoulders which also house it's main thrusters and make it an inviting target for that reason alone if you're the kind to pick specific bits out, but the armaments are almost certainly meant to be used at range (considering they're all ranged weapons and all) and expended long before taking anyone on at the kind of range where specific parts can be targeted.

When it's doing another role. You can't convert a B-2 into a fighter, but GP02 can.
GP02 is specialized for delivering the nuke, that is true. But we saw how it can fight GP01 and other MS in regular combat, even melee duel. So it can be converted to another role, especially when your unit is as desperate as Delaz Fleet.

Seeing as how GP02 was designed to withstand a close-range nuclear blast, I'd say that it's bulky design is already "Full-Armor" and that picture is just the result of the Delaz fleet getting overzealous with a hotglue gun.

Not him but even if it's simple to do, it definitely would take more time to do an entire movement to spill forward the grenade launchers and then manuver the entire mech to turn around and reach for them (because his shoulder thrusters are huge and totally in the way).
Plus, to spill it forward the GP02 would have to be moving forward (and ONLY forward), unlock the launcher, stop the mech so the launcher flies out, then time the grab just right or they'd be playing a game of catchup with the damn thing. All while not trying to get shot in their huge fucking target of a mech.
It's extra time spent fumbling about from every perceivable angle. And it would be even worse for the grenade launchers on the far ends of the shoulders.
With weapons strapped to the waist you don't even have to account for momentum. Just grab and fire.
And taking the other Gundams into consideration since you brought it up: When they pop beam sabers out of their shield it's usually popped right dead center in front of them as opposed to the side. A place within easy reach. Plus since the beam sabers have a jettisoning mechanism (as opposed to just being strapped to the mech), the pilot doesn't have to worry about momentum either.
