As much as I fucking love Kirby, I don't believe he can beat EGD. I've never read Demonbane, but the way I understand it is that EGD wins because EGD > anything that fights for good > anything evil. But I'm guessing there is probably more to it than then.
That being said though, Kirby is one of the stronger fictional characters. He's beat a god of death, lord of nightmares, embodiment of all darkness, and a being with limitless power. Combined with the fact that he can copy his enemies' powers AND pilot a mecha? Kirby is someone you don't want to fuck with.

Eh, not really. EGD is epilogue/side story material, it doesn't get expanded on much because it's not exactly part of the story itself. In one of the endings the main characters go on a crusade to beat up all of Lovecraft's evil god thingies in their giant robot, slowly start gaining ground through hard work and guts, and eventually attain godhood themselves, becoming the elder god of justice and good winning against evil since up there they're pretty much the only ones to care about that kind of idea.
What if Kirby managed to copy Demonbane? Then is it more of an even playing field?

Cutter is pretty boss. Beam's main fault is that it's kind of boring even though it has quite a bit of move diversity. Sword I find to be kind of crappy, I can't tell what the Skyward Sword move even does.

While I agree on beam, cutter is fucking awesome if you know how to use it. If you launch them backwards as you're falling, they'll fly forward and hit foes in front of you. You can also curve shots.
