Doom is whatever Doom deigns to be.
Doom is really weird in that he's probably the single most wanked comic book character. Worse than Batman. Writers have been dropping his character flaws in favor of making him the best at everything, ever, who literally had a god tell him the only way the future will go well is if he rules it. How the hell did that happen, I have no idea.
I don't know why, I find the idea of an asshole doing whatever he pleases kinda hilarious.

We know that Iron Man has had hundreds of variants and models of armor over the years, while Doom seems to stick to his iconic look. Even then, I'm sure that Doom has had different variants or upgrades to his armor over the years. Any chance of some anon's posting a few?

Doom's mostly stuck to one design because he's not a main character. And also because he gets to do science that isn't more and more armors, so there's no need to do armors.
