I wouldn't set Unicorn as an end goal for the Gundam series. You should just watch what you think would be interesting.
Unicorn itself is a later entry in the UC timeline and follows after the original Mobile Gundam, Zeta Gundam, ZZ Gundam, and Char's Counter Attack.
Outside of that basic early UC backbone are UC sidestories, late UC, and alternate universes.
