First Gundam is the best series in the franchise. In order to fully understand what Gundam is all about, you really ought to watch this series. It defined nearly all the tropes ilthe franchise still uses today (zeta defined the rest).
Is it perfect? No. But I think it is the most poignant

The first few episodes are amazingly well paced and structured and this remains solid throughout the whole series.

It's also why you see so much misinformation in a lot of discussions - you start being able to tell who has watched and who's just running on hearsay and reading summaries.

Then you'll have to watch both the series and the movies.
If you like Gundam, you're probably going to want to watch the series anyway. The movies are the most important half of the story, but no matter how you look at it, it's still less than half of the run-time of the series.
If you don't like Mobile Suit Gundam, you probably aren't going to like the shows you're in a hurry to get to anyway.
If you just want to know enough to be able to shit out "opinions" on /m/, you don't even need to watch any of it. You can just play through the story on Dynasty Warriors Gundam or one of myriad Super Robot Wars games. Lots of people here only watched the movies and constantly congratulate each other on not wasting their time with the full series. But if you want to actually *know* what those people skipped instead of just trusting them to tell you how a show they didn't watch had nothing to offer, you'll need to see it yourself.

It annoys me so much how Gundam 0079 is just seen as a stepping stone to get to Zeta sometimes, especially by normies. It's the one of the best, if not the best, series in the franchise. Watching the movies that cuts it down into a much smaller time just ruins it. The movies aren't even bad, they're pretty great by compilation movie standards, it just annoys me how much people seem to want to rush through the franchise instantly.
The meme that the trilogy is better is mostly bullshit. The TV series is pretty good provided you can survive the G Armor pandering stock footage in the middle of the series.

If you plan on watching more Gundam, there is literally no reason to not watch the series. I'm tired of dealing with ADHD faggots who think Zeta and ZZ drag because they've never watched anything longer than 24 episodes. I have ADD and binged all of early UC in under a week, OVAs and all. There is literally no excuse for someone to cut out a large part of the viewing experience like that to progress to something else. The 'villains' are the most retarded of any Tomino work, almost none of the new characters are relateable or even likeable, Jewdough is a straight up Gary Stru.The biggest 'character development' is when two of Jewdough's friend decide to stop trying to murder him. Or and a garbage ending because CCA got green lit so Tomino had to add the worst filler episodes of any Gundam, ever, Tomino kills a character to try and force some development, but then brings her back to life because 'lol Tomino', and make some random named grunt suddenly put all his points into charisma and lead a civil war to help hand victory to the protag group.
ZZ accomplishes nothing outside of dealing with a loose end for Zeta of what happens with Axis Zeon. The Zeta Movies dealt with that in its ending.

I love Zeta and ZZ series though, and the original trilogy movies are still better.

And you really shouldn't rush through them like that, if you binge, you'll inevitably miss details like character development or plot. Take you're time and enjoy watching them. The Trilogy movies for example. Just watch them at your leisure over the period of a few days to really let all that gundam set in.
