Its his best design in Unicorn. I liked the Quinn Mantha a lot, and the Kyshatria keeps most of the design cues while fixing up a lot of the details. Although I'd love to know why someone would make a successor, and why they then made it so much shorter.

They still have some basic cameras, just without the head the pilot loses out on the advanced sensor suite MS' have.
In 0083 the Zaku Keith was piloting had its head sliced off and had to bumble around avoiding the Dom in close quarters, and he could still manage to attack with a heat hawk (probably down to luck being it was a rocky area with dense fog.

Pretty sure there are lower grade cameras around the body.
But the head contains the powerful high mag cameras, IR cameras, UV flashlight, radar, lidar systems, etc. All that shit gives much more accurate info on the target to the AI in order to help it aim the weapon its holding.
I'd imagine it's like trying to shoot from the hips when you usually have the benefit of a scope with zoom, night vision, heat vision, laser range finder, and automatic adjustments for ballistic drop and windage. Just your eyes and own judgement.
