If you want to get good with bodies in an anime style, and develop your own style, it helps to look at tons and tons of other people's work. In anime, there's really no exact anatomical correctness. Just stylized art that you like, and stylized art that you don't. Well, that and stuff that's just blatantly wrong through inexperience, I guess.
Anyway, set aside images whose style you like. Keeping in mind things like proportions, level of anatomical detailing, facial feature style, etc. Try to figure out what in them appeals to you personally. Is is the way the artist draws the torso? Tits? Ass? Feet? What aspect of each particular image made you like it?
Once you figure that out, try to imitate it. Start out with directly copying (but not literally tracing) the picture in question, or at least the section of it you liked. Eventually, you get enough of an understanding of what makes a given image appealing to your taste, and which elements you like fit well together. By then, you'll have developed a style of your own naturally.

I've done only a handful of garage kits. Nude ones are actually the easiest to start out with, because an even skin tone and smooth surfaces are way easier to sand and paint than some complicated costume.
Also, when you start out, look for kit recasts on eBay or something. You're gonna make mistakes on your first few kits, and since recasts are just copies of kits made by creating cheap molds from the parts that came in the original, you can get them for way, way cheaper than the real thing. In addition to saving money in this way, they'll also have a bunch of minor defects due to the manufacturing process like air bubbles in the resin that need to be filled, or bad seam lines from the molds. This will help hone your skills at the same time.
For example, here's the first one I ever did. It's a recast I picked up on eBay for like $10. It was also my first time working with an airbrush, just a cheap one that used compressed air cans I picked up at the local hobby shop. Nothing fancy. It doesn't matter that I didn't get the skin all that smooth, or that I didn't do any shading or differentiation in skin tone or on the wings, or that it's a little rough around the edges. It was only $10, and it helped me learn enough so that my next kit will be better. If I ever get around to finishing the other two I never got around to completing. Or find where they ended up, for that matter...

My tips based on what I learned with this one:
Invest in some epoxy for seams and air bubbles. I'd go with putty, personally. It takes a lot longer to dry and isn't as strong, but you work with it like modelling clay, and it's way more forgiving.
-You'll need an airbrush, even if it's a cheap one. Brush painting anything but small detail areas is gonna look awful.
-Rather than only gluing/epoxying pieces together, do this: take a Dremel tool and make small holes on each of the faces to be joined. Then take something like a small piece cut from a paper clip and insert one end onto each face of the pieces where they'll be joined. (much like with that peg in Asuka's right butt cheek that holds her on the stand in the previous image). This makes the parts hold together way more strongly. The last thing you want after having glued a leg on, having filled the gap with epoxy, sanded down the excess smoothly and done all the painting, is for that leg to fall off because you mishandled it a bit.

Well, I suppose you could try brushing it, and then VERY gently sanding it to smooth out brush lines.
You'll probably want to thin the paint a decent amount to minimize the bumpiness from brushing to begin with, using several coats to get it consistent. Then get the finest grade sandpaper you can find, and carefully and gently sand it down if necessary.
That's the beauty of working with recast kits. If you fuck it up, who cares? Not like you spent a ton of money on it. May as well experiment to see if you can get the look you want using whatever methods you have available to you. Remember: if it works, it isn't stupid.
Though when I was doing it, I found that possibly due to the small size and very limited airbrushing I'd do in a single session, the fumes barely ever even got to a level where I noticed them. And I didn't ventilate the room at all.

I found where my incomplete kits went. The legs have been (mostly) attached and sanded, and you can see one of Asuka's arms has been pinned and epoxied in place, but not yet sanded down. That's because in this one case the putty epoxy alone wasn't strong enough and it fell off during sanding the first time. Around that time I stopped working on them, and eventually misplaced them. This was like 5+ years ago.
You can't tell from this crap lighting, but the main part of Asuka's body has been painted, and the assembled (and some non-assembled) parts have been primered, then sanded again.
Not sure if I'll have time to continue working on these in the future, since my work the last few years has prevented me from even finding the time to snap build Gunpla. But now that I at least know where they are there's a chance. I was hoping to pose them together on the same base. I found a nice wooden base that I was gonna paint gloss white and then make a stencil for the NERV logo in the middle. Now I gotta find where that went, too...

I was also thinking of painting on their plugsuits (TV versions, of course) to give a body paint look. That's a lot of careful detail work, but maybe it'd be worth it?
Also, you can tell by the hair (Asuka's especially) the kind of quality issues you'll deal with in recasts. There's some bits that are just missing due to air bubbles, and really rough edges on all of it. They can be worked around with careful filing, trimming, sculpting with putty, and sanding, but it is possible to get them looking really, really good if you put in the effort. There's no way in hell I'm dropping $100+ on an original garage kit until I'm way more confident than this that I won't fuck it up.
