Beam shielding gets to be a pretty big, important thing come late UC, e.g. Victory, but actual physical protection against most weapons is seems kind of difficult so far as I can tell.
Anti-beam coating is expensive, for instance, and as time passes actual armor simply becomes negligible as beam weaponry becomes absurdly powerful.
However, you still get really powerful ships without much in the way of apparent beam shields, the Motorad fleet (Victory again) could tank shit like crazy. This is besides how they were generally fucking invincible and pretty good at pushing shit in, but that's beside the point. Better than a comparably ancient Musai or Zanzibar.

Most ships seem to have an auxiliary bridge available, which is usually just a closet deeper inside the ship. It actually makes more sense for spacecraft to be that way since you can use cameras for visuals and all, and you're both more armored and more protected from void radiation and shit. But a lot of sci-fi just builds spaceship like conventional naval vessels or aircraft, so we get a lot of vulnerable glass cockpits.

I always figured that it was just never worth investing in protection when weapons technology became so devastating.
Practically every ship uses some form of Mega Particle Cannon which in most cases blow holes clean through any kind of armour, anti beam coating exists but only works to a certain degree for smaller weapons and is only temporary.
Despite long range missiles you now have high speed mobile suits, as soon as those fuckers get close enough they'll hit a weak point with devastating short range beam or explosive weapons, or worse penetrate the ship's hull with melee weapons. The problem with being in space is that you're in big trouble when the ship gets holes blown out of it, as explosive decompression makes for a bad time.
So it boils down to regular naval warfare, outmaneuver your opponent and destroy them before they can counter attack.

Cause a beam from a ship in battle can hit you anytime regardless of where you are - a colony or Earth. Plus, someone calculated it here once, a colony should take days for the air to evacuate even with a large hole based on their size, so you'd have plenty of time to get to shelter or repair it.

Yeah. Air can only leave so fast through a hole; if a micrometeorite hit and made a hole about a meter wide or something, it could take weeks or longer for all the air to be drain. Unless it hits like right next to where you're standing or half the colony is broken off, you'll have plenty of time to get into a shelter or something.

I do have to say I do love how gundam and other shows like this can spark discussions like this.
Imo Zeon is "what if the American Revolution was headed by Hitler". You start with fed up population who have their own pseudo-government tolerated by the colonialists. Then when they get taxed and realize they can't do much about how they're governed, they push back. Then Hitler takes hold and decides to Pearl Harbor the colonialists' military center by throwing a Virgin Island at the British Isles. And then the One Week War starts. And then he's preaching about American Exceptionalism as if it's a divine sign that they're the superior race and the others can get fucked. And any other totally unrelated colonies who are not with them are also nuked. And by the end of it, those guys who just wanted independence are gassing cities and attacking civilians because they're Britnoids. And when they finally lose, they keep spawning rebellions for years and years so colonists keep suffering and British control gets stricter and stricter. Also half of each country's populations are totally gone, including British overseas colonies.
Then the Gryps Conflict of 1812 is about the French-funded American Equality Union Group fighting the evil Blackcoats (starring formerly-loyalist defectors) when suddenly BAM! Axis Spain arrives.

forced space colonization is partially refuted in Unicorn and Origin, though a significant proportion would probably have been forced anyways. Diner man in UC claims there were many who voluntarily went into space, and Roselucia claims that spacenoid resentment is a phenomenon of 2nd generation colonists and onward.

I've always wanted to get into gundma, so I'm starting with the original, mobile suit, and holy SHIT there are some QUALITY moments in this. Did rulers not exist in the 70s?
Also, are there any episodes that are strictly filler/skippable? Not that I'm not sort of enjoying it, but 43 episodes seems like quite a few, I'd like to be able to move on to something a little more new

0079 is the pinnacle of the franchise.

I think they all have their advantages and disadvantages. It more depends on what you want out of your Gundam show. With that, the original suffers from some odd frames and entire scenes with some very off proportions. However, the characters and story is quite good and mostly holds up today. Also, in my opinion, if you watch a later series you'll come to respect the original more, at least that's what happened to me.
If this isn't just a bait post and you want a real recommendation I think someone who has never seen a Gundam show might do well to start with the original first. I think it does the best job of introducing all the sides, giving you a grasp on the most well known MS models, and iconic characters that you will see or at least mentioned through all the other series.
I see a lot of "You should watch Gundam 00 first" and I disagree. If you want to I can't stop you, but it's not going to actually help you understand whether you're going to like the UC timeline, which quite a lot of the series focus around. Hell, I'd recommend diving into Unicorn if you absolutely cannot stand the animation errors and age of the original series.
Zeta also seems more accessible even though it's still a step forwards from 0079 and you might feel lost at the beginning. It also doesn't help it's 50 something episodes, but again you get more about the titans, Zeon, Earth Federation, AEUG, etc.

My only guess is that the beam saber is actually quite heavy/uses more power or something so the backforce was stronger than hers, but I don't even think she had it ignited at that point.

In canon the Gelgoog is a limited production machine, not unlike the late GMs. They came so late they never had a chance to pump them out and most were destroyed when the Federation pushed Zeon's shit in at ABQ.
