So what's a better unit, not counting aesthetics, the Schwalbe Graze or the Graze Ritter?

Schwalbe is less stable but faster and more agile iirc, kind of like the Tallgeese. Ritter is just a good Graze. I'd personally guess Schwalbe in the hands of an ace but for a grunt you'd want him in a Ritter, which means that Schwalbe has more potential.

Schwalbe is definitely better in space, unknown how it performs in atmosphere.
Schwalbe was an earlier prototype built based on the same frame as the graze and is less stable so it's harder to control but has higher performance than a normal graze. It requires a skilled pilot to be used properly.
Ritter is mostly a regular graze that has been slightly redesigned for aesthetic purposes as it was purpose made for a decorative unit. While it is fully functional as a graze and isn't noted to suffer performance issues compared to regular ones, most of its alterations are for decorative purposes. And its only standard issue weapon is a broadsword. It does however have the option of being equipped with ground use parts.
Overall I'd say that the schwalbe is better, but it depends on the field and pilots skill level.

Since the Schwalbe Graze never step foot on Earth, maybe the Graze Ritter since it can be outfitted for ground use instead of a Graze Ritter that's only suited for ground use. If you include the pilot, the Schwalbe Graze as long as you hand it to a capable pilot.

The irony of this is, there's relatively few beam weapons in Beast to start with. It's really only in the later books they show up a lot. So if it were made into a show, the battles would largely be rock-em sock-em robots like IBO.
For that matter, Kouou and Kimaris Trooper look like cousins.
