Marriage is not only about infatuated love. Marry for that, it'll end in 3 years if you are lucky. Hikaru did love Misa. He actually loved both. But he was really horny for Minmay. Minmay was the girl of his dreams, but he realized it was pretty much a stupid dream to follow.
But it's not as if Hikaru were Misa's only and greatest love. Her was Riber, but he died. He understood how Hikaru felt, that's why she didn't mind being some kind of "second choice"; because given a choice, she would be with Riber, not Hikaru.
In the end, they both understand that Claudia was right all along, not only they have feelings for each other, they also match as a couple. They have the same prospects in life, they pretty much think and feel the same way about the war against Zentraedis (they recognize that the call to arms is necessary to avoid extinction but at the same time they'll do their best to initiate peace negotiations), they both know about loss and they have quite a history together.
The thing with Macross is that a lot of it was screwed up by incompetent executives, who first said "you have 48 chapters", then said "screw it, you're going for 26". And when the whole series was planned for that, with the huge ratings it got they said "now it's going to be 36". So a lot of things had to be changed on the go. After the GOT chapter 27 the dynamic between Hikaru and Misa inexplicably changes back to that of chapter 15 more or less, because they now had to develop that in the last 9 episodes, together with the reconstruction and the insurgence of the Zentraedis that couldn't stand a life without war, led by Kamjin.

But I agree, Sunset Beach is underrated. Also is Silver Moon. I read in some review a very true statement, it's incredible how Minmay's songs evolve during the show. They begin to be quite simple, naive songs about your first love, but they gain in substance and complexity as the show goes on.
You could even divide them in groups (even if you end mixing TV and movie songs):
- The first innocent and somehow shallow singles (Watashi No Kare Wa Pilot, 0-G Love, even Shao Pai Long).
- The more developed love songs (Sunset Beach, Silver Moon, Cinderella, I'd say even Oboete Imasuka, although it's the central song for the movie); not only the lyrics talk a little bit more about the longing for love (not simply "I got in love and the clouds are pink"), also the instrumentation is more complex (well, excepting Cinderella, of course), the harmonies are richer and they are better songs in general.
- The songs about broken hearts and the pain of war (Beautiful Place, Yasashisa Sayonara, Ai Wa Nagareru). As previously stated, two of these are my favorites; they have deeper lyrics and more musical substance in general, great arrangements, it's more dramatic music.
There are another songs, of course, but those are the ones I think that show an evolution in Minmay's hits, across the series and the movies, as she grew up with the plot and the other characters.

This. Don't get me wrong, moe did exist in Macross; it might've even kickstarted it in the 80s. But it was there at a tolerable level. They didn't shove Minmei pouting every two fucking seconds. There were even chapters where Minmei was barely there. And at the end, even if Minmei became quite important, the series is mostly about Hikaru and Misa, about war and it's consequences, about the VFs.
Macross was always about an equilibrium between all the elements: love, idols, war, mechas, music. Sometimes they highlighted one more than the other, but they used to make everything matter. And in fact, the best Macross iterations are the two that care the most about VFs and the beauty of flying: the original series and Plus. The most they highlight the idol aspect, the most they suck. I'm not saying it shouldn't be present, I'm saying it should be contained. But if Frontier was bad enough with the constant idol worshiping and it's stupid pseudoscience (Harmonics in the idols voice that resonate within insects? Really? Are you fucking kidding me?), Delta will be downright unbearable.

Not to mention its a different style of CGI entirely more akin to cel shading than the more realistic look of Zero. I mean 2002 had some good CGi from Blizzard (WCIII) and Square (FFX was released the year before) but the top rated consumer card from nVidia at the time was the GeForce 4 ti and best CPU was a single core 32-bit x86 processor pushing 2 ghz.
2008 saw the release of nVidia's 8800 Ultra and the intel i7 965 extreme edition, a quad core 64-bit hyper threading 3.2 ghz beast.
It's really amazing to see how far computing has gone since then and how graphics and gaming has pushed a lot of that evolution. As for your second point, I can see the stylistic argument but I can still be disappointed in the perceived quality.
