The original Gouf is my all time favorite design. Nothing beats it to me. There's just something about the design that makes it perfect on every level. Perfect balance between all the proportions with the spikes and shield.

Aside from those random pink bits, I think the color scheme is perfect as is.
I know there's no end to divisiveness over the series itself, but the design of Zeta itself is still one of the best ever made to me. Very few mobile suits have managed to pull off looking so complex and advanced...but also trim and lacking superfluous things as effectively. It's also just aged incredibly well as a design I think.

By the way, I remember years ago finding an image of a pretty sweet mech that was obviously the Hi-nu with the serial numbers filed off. Unfortunately I lost it when I had scrap a dead HD.
