What would be the AR15 of mechs? By that I mean modular weaponry that has a basis in a common platform but can be outfitted with a variety of optional equipment depending on situation and preference?

I'd agree with the Strike Gundam if we want to go prototype/limited production mechs.
If you want standard issued/mass produced, I'd say something like a Scopedog. I guess you could also say Armored Cores, but they seem almost too customizable to even have a standard model.

The Strike is specifically designed to be a multi-loadout mobile suit, it's true, but there are a LOT more variants of the GM than there are Strike loadouts.

most of the SEED designs were. Dinn is one of my favorite not-Zaku and Duel is one of the best looking Gundams there is (I think it's that smooth paint-job and the really basic equip that really does it for me). The only ones I really disliked, or rather the only thing I disliked about SEED's mobile suits, was that silly pointy hat they gave all of Athrun's suits. I know it's a japanese culture reference, but it just looks dumb to me.

SEED and SEED Destiny, honestly, feel like any other series that tries to copy the Gundam formula and message. That's strange since it is Gundam, but it all feels too generic, which can range from mediocre or bad.
However! There are so many good designs in the series, while others having a lot of potential if guided by a better color scheme. The GAT series being one of them. Duel, Buster, and Strike are amazing.

CE is unique in that almost everyone adopted modular designs by SEED Destiny.
The RX-78's legacy in UC is its name, which is adopted by other MS as part of morale and whatnot.
The Strike's legacy in CE? Everywhere. Every nation builds modular MS. Before the Strike, modular MS weren't as wide spread. After the war the Strike appeared in and proved its capabilities(When Luna went on her rant of Athrun's accomplishments, taking out the Strike was one of them), everyone rolled out modular MS.

I think there are. We see a lot of prototype Zeon suits but for pure finished suits there are more GM types. Like you said though, the GMs are very limited production and Zaku variants were often produced in large quantities.

It is the standard, Jet Striker, Aile Striker, Blaze wizard, etc are the most common modular backpacks seen. It just so happens that equipping other modules meant for other roles usually requires taking off the mobility module.

Even if the frame of the Windam didn't restrict any usage of the original Striker Packs to their back attachment only (I presume that might reduce their full gauge of usefulness), the Jet Striker was probably a better balance of improved planetside mobility and firepower for masses of moderate-skill pilots in large battles rather than going after either the Aile, Launcher, or (assuming the back-mounted hardpoint compatibility even exists in the first place) the Noir Striker.
In all fairness the ZAKU Warrior is better represented with both the Gunner and Blaze Wizards. Slash is probably as unconventional as they come which is why it appears for only a brief moment.

Why the fuck has only one person said Scopedogs? Cranked out in production by the millions in the bog standard vanilla version, hugely customizable and versatile in any situation. You want to turn it into an artillery platform? Just strap on a shit load of extra guns and missile launchers? Tactical strikes? Give it a smoke grenade launcher and a Turbo Custom leg thruster upgrade. Stealth mission? You paint it black. Done. You can waterproof them for swamps and jungles, they're somewhat airtight so you can slap a thruster module on them for space combat, give them a set of ski motors and they work on sand and ice. The only downside is how easily they blow up, but at least they're cheap and so are pilots. You see dozens of Scopedog variants in VOTOMS, and the only thing they share in common is the base model.
Gundam really doesn't do ace customs outside of spin-off manga or model kits, so I have no idea why people are holding up Zakus and GMs given how few times we see custom variants in actual mainline Gundam shows.
