You cant really compare how things in America work to how they're done in Japan. Both cultures have too different sensibilities and values. Even if you look at Japan you can see the different approaches: Toei (constant reinvention) vs. Tsuburaya (strengthening nostalgia)... while in the US everyone follows Marvels "cinematic-universe" footsteps. Ultraman is worth keeping alive for the strong brand value alone: Ultraman has its own restaurant franchise, clothing brand for adults, festivals, the characters are regularly licensed by other companies for promotion and advertising etc.

Yes, especially since the M78 continuity has various Ultras return from time to time. The only problem is that Ace isn't fully-scrubbed yet and its bootleg subs aren't on the Internet like Taro's. Also, make sure you live in a country/region that lets you watch Ultraman on CR, though, because Gaia is exclusive to that for now.

For older shows

Man is the original and made in a great style that holds up, each episode is basically a mini-movie. Seven is a much more serious take on the hard-scifi aspects of the genre and less about superheroics. Leo has great martial arts action and a lot of dark story elements. Check out the first episode and tell me that ending doesn't play like the penultimate to any other series.
For newer shows

Gaia's the one with a story heavy structure and was the first Ultraman to do that while Nexus has a much more adult tone while still being optomistic about what makes Ultraman a cool hero. Mebius is basically the best possible way to do the anniversary aspect - great set of new characters who learn and interact with past heroes from time to time but are never outshone or made to look like they can never like up to the past.
Those are what I've seen brought up as the best in my time around the internet but I'd also throw my hat in the ring for Dyna. Dyna's first half is a comedic take on the franchise before ramping up into this dramatic story. It seems like Tsuburaya's goal was to make you fall in love with the characters via their antics and then just throw every bad thing possible at them to give you the feels.

The great thing about Ultraman is that Tsuburaya isn't afraid to be bold in experimenting.
Ultraman is pretty much the same audience as Kamen Rider and Sentai but there are exceptions. Ultraman Nexus seems to have been a show originally intended for teens and older audiences. Ultra Seven X was a straight up 2 AM show meant for adults.
The original Ultra Seven is heavy in hard sci-fi, so I imagine there is a lot about the underlaying structure of the plots that would appeal to an older audience.
(then you have stuff like the Ultra Galaxy and Ultra Q shows where the monsters are the main attractions and there are next to no Ultraman appearances)

I've been reading the manga. It's... okay I guess. The main character is more Kamen Rider (or Iron Man) than Ultraman and it's pretty standard shonen manga faire.

Generally speaking, the latter. All the Ultras up to 80 (plus Mebius) are in one universe, while most Heisei series are all in their own continuities except for the Seven specials (which is a different timeline following after OG Seven) Tiga and Dyna. Don't recall which universes Joenius, Great, Powered and USA fit in, though.
