Danazine with BuCUE heads replacing the normal head and in place of its two wings, or maybe just get three Danazine heads. Possibly replace the feet with Gadezza feet or something. Would be intimidating as hell and focused on ripping enemies to shreds in between blasts of the main cannon. Ground-based but very fast and has a good jump. Can't maintain air and does poorly in space though.

Inspired by a certain Calamity Gundam custom, I'd main a EW Heavyarms Gundam modified for melee combat.
The beam gatling guns would be converted into beam pile bunkers, with a hidden launch-able stake for emergencies.
The chest-gatling gun and missiles would be swapped out in favor of stakes, because why the hell not. The vulcans would be left as is.
Slap that baby in a minimalist white/blue paintjob and the Heavyarms Paladin is good to go.

There also had ought to be some computer based component to gunpla battle wherein you use software to configure how your gunpla actually works.
Without knowing how those things actually work it's difficult to come up with ideas for viable designs.

I've seen both build fighters series and gunpla builders.
It's continually stated that build quality affects performance, but it's never actually explained how or why or even confirmed as being factually correct. Everyone just says it's the case even though rationally things like nubs couldn't possibly impact performance. There's even the snapfag simon episode in which the titular snapfag dunks on customized gunpla in a gunpla built by a child, while this is played off as "he's just that good" it casts doubt on the validity of the idea of build quality affecting performance in inexplicable ways.
Because the game isn't real you can't actually test to see if this kind of thing is true or not, but if it was real I wouldn't take it as a given, I'd try and verify it and build my shit accordingly.

This would help prevent parts coming apart from having force applied to them, which would be helpful when impacts are concerned, but wouldn't help much vs anything else.
There's two potential explanations for paint. Either the layer of paint physically helps protect the underlying plastic like you said, or the battle system checks for paint and applies an arbitrary stat bonus for something being painted.
In the case of the former then there's probably an optimal type of paint to use and using thicker paint almost certainly provides much more protection than thinner paint, which potentially means a badly painted gunpla with thick as hell sprayed on paint is probably better than a well done, airbrushed gunpla. In the case of the later and it's a bonus applied by the computer system then, in all likelihood there's no differentiation between a good paint job and a bad paint job.

Just to mess with people, I'd use something not Gundam related at all.
First I'd use 3D printing to model and print a Gunpla scale model of something like Combattler V, then use casting and vacuum forming to cast molds of all the parts. Face it, man, you can't get invincibility unless your name is Sekai. All you'll do by stacking defenses is blow through your particles faster. Pick one defense, come up with good ways to use it.
I'd want maximum maneuverability and mobility so I'd use some transformable Zeta-type with leg skirts for skating across the ground and all the extra thrusters on the GP01-Fb, like the ones in the chest vents and of course the giant shoulder ones. My armaments would be pretty typical, except for the addition of some kind of "spray and pray" beam weapon as a side arm and the Alex's hidden gatling guns.
