We don't even have any read outs that specify yet which variant is better than the others performance-wise. The only variant that's a given is S since they are always given to squadron commanders, Even then the difference isn't that significant. And if the VF-31J has superior performance it doesn't make sense to give it to Hayate who'll be the newbie in the team.

It's easy to infer the performance of specific variants from the several generations of master files we've gotten. This isn't dowsing or fortune telling, we know these variants' roles and performances just from the letter alone.
There's only one exception to that rule and that's the VF-31E. The VF-25E was somewhere between the F and S performance wise and was supposed to use the Armored Pack as standard.
Recon/AWACS craft are usually designated VE or RVF if they have a built in radar and a massively improved Avionics suite. But all that really tells us about the VF-31E is that it's either meant to only use the radome container pod or that Chuck was using it specifically because the mission dictated it instead of a different container.

The differences between each variant is very minor outside of specialised stuff like RVFs anyway. You give the pilots the A variant and they probably wouldn't even notice the difference in performance unless they normally fly the specialised VFs.
