It's the whole "racecar" thing they have going for them, especially V2. They look like they're designed with maximum practicality in mind while maintaining a sleekness that doesn't detract from it's militaristic uniformity in overall profile.

V2 is the only "special snowflake" Gundam in the show, but even then, it doesn't seem like one outside of it's add- on equipment (likely because it was meant to be mass produced) and it still manages to expand on the "victory-bound" motif established with the V-Series suits through the V-shape in it's minovsky drive setup.

I never saw it this way,I've always seen the victory series as an example of late U.C. technology beginning to move into a phase of early utilitarianism. It seems like there are no extra exhausts or unnecessary details on these suits and it emphasizes that they're built purposefully while still retaining elegance.

It's also their overall shape,unlike most mecha we see with unneeded accessories and gimmicks the victory types only use what is needed and don't over do it. Even the V2AB still manages to stick to this formula while keeping the basic silhouette. These design choices can be seen echoed in turn A, which is one of if not the cleanest mecha designs I've ever seen and it also has the same purpose as the V2 design wise although it's way more advanced.
But looking at how tomino chose the designs for gaia gear, I didn't get why they decided to stagger back from pre-utilitarianism to a design aesthetic that looked reminiscent of Zeta and f91 with a touch of macross.

Probably because Gaia Gear is technically not canon because it was made before F91 and V Gundam and doesn't incorporate a lot of the things they introduced.

The only Gundam story predating Gaia Gear in it's timeline is CCA. F91 and V Gundam never happened.

I like Second V but for the most part, it just looks like they slapped a bunch of shit on a V and called it a day. It doesn't have the sleek elegance of V2.

Plus V2 has those bulk arms that make my dick diamonds.

The Zolo is the best Victory MS anyway.

V2 Assault Buster has the benefit of the extra parts looking like it was built for it, especially with the fact that in order to get the buster parts on, they actually have to remove the minovsky drives and mount them on the pack itself (Assault pack doesn't even have to bother.)

With Second V it just looks Zanscare captured a V,put a cannon on the shoulder and gave it a new shield. Even the Minovsky Drive looks kind of out of place because the V Gundam's general profile wasn't made with Minovsky drives in mind. The original backpack looks a lot better.

You do realize they make mildly off-white shades of white for model paints for the sake of less jarring levels of contrast with other colors you are using, right? If you're good enough, you an mix it yourself.

That's off white, by modeler standards, as >>13795528 mentioned.

Generally speaking, most professional modelers tend to avoid pure white if at all possible because of how it reflects light, especially on-camera. Off-white tends to make minor details (especially on scratch builds) seems a lot more natural while also helping them stand out more.

Either that, or they use alternate shades of the same color, though personally, I'm not a fan of this approach...
