What are some mecha that aren't all doom and gloom. Maybe something with a strong romance, or a likeable cast of characters.

Kidou Senkan Nadesico (romance drama)
Date A Live (LN Harem, I don't know if you can consider it as a mecha, but there's girls fighting in a mechanoid in it. S2 quality production is lowereveryone get a kiss)
RahXephon (well it had "CUHRAZY aesthetics" but the christmas cake win, so worth it)
Zegapain (found it meh, and best girl didn't win)
Gunparade March: Arata Naru Kougunka (Mainly SOL, had mecha fight with mostly reuse of animation for every fight, had romance)
Captain Earth (Uneven episodes between boring ones and good episodes, nice romance ending)
Full Metal Panic! (one sided romance)
Asura Cryin (best girls win)
Valvrave (best girl won, then lost, the viewer cannot win)
Robotics;Notes (very SOL-ish until the plot kicks in, best girl win)
Plastic Memories (focused on romance, android not mecha)
Chobits (android, romance for everyone except MC)
All these have romance in it.

I agree with OP, i don't like Gainax either.
They try too hard to make things a certain way, whether it be whimsical or dark. It always feels forced and unpleasant.
Generally i don't like Gainax, their pretentious upper level staff, or their annoying and obsessive fans
