Why? Because Zeon consisted of colonists, and colonists consisted primarily of the impoverished underclasses that were forced to migrate as cheap labor, while the elites remained on Earth enjoying the newly expanded living space and the increased trade and tax income from controlling the spaceborne populations.
Being inhabitants of the poorest and most exploited region on the planet, most Africans would naturally have more common cause with Zeonic independence-seekers. Is this somehow difficult to understand? Frankly, considering the divide, Zeonic characters should consist roughly 30% of Africans, 30% of Chinese, 20% of Indians and then others, rather than 60% germans.

I always thought the Feddies pretty much ignored the marginalized peoples of Africa for most of their existence, and the Zeon promising to liberate them from their narcissistic and apathetic leaders was enough to convince them to jump ship.

That depends on a lot of factors, really. And the similarities between the political situation of Africa and that of the colonies is even closer than you might think. The reason that Africa is in the economic situation it's in is because of centuries of puppet rule by european empires. British, French, Roman, you name it. Pretty much every region of Africa has been conquered a dozen times over by eastern or western european powers.
And we know from Girhen's dialogue with Degwin about the new charter that he planned to maintain humanity's Dec 0079 population level with "only the superior races". So it's not only easy to imagine Girhen wanting to shuffle everyone of African descent off to the African continent, but it's also easy to imagine these people being eager to reclaim their ancestral homeland from the earthly empires that have bled it dry for a millenium.
Hitler did the same thing, more or less. He claimed that he had no ill will toward the Africans and that it was just as proper for Africa to be free of whites as it was for Germany to be free of Jews. There's even that famous story about Jesse Owens getting a ticker tape parade in Nazi Germany but having to ride the service elevator in New York.
Of course, given that Hitler apparently wasn't as keen on "France for Frenchmen" as he was for "Germany for Germans" it's debatable whether or not he'd have actually stayed out of Africa.

Because they needed to keep momentum on their side after the Antarctic Treaty, along with claiming resources to help supply their war effort. Also if they didn't bring the fight to the Federation, the Federation would have just do what they did at the end of MGS earlier. (Build up a fleet, send it to space and then Zerg rush Zeon.)
The real blunder was the slow down in R&D where it took almost a year to roll out the Gouf, Dom and Gelgoog. If those units weren't thrown into limbo during the stalemate, the war would have gone a lot differently.
