They have a unique and immediately recognizable silhouette with enough details and extra bits to look interesting without being clusterfucks of color and pointy bits, and they fall really nicely between looking mechanical and organic, which makes the berserk scenes have a pretty nice effect.
Unit 01 in particular has maybe a bit too much going on in its upper-half in regards to color, but it's not really a problem at all and a lot of people could like that sort of thing.
So yeah, I'd say they're fairly well designed.

You can change up the details of the Eva units, but you drop your fanfic creation into a group of other robots and you can still pick out the Eva pretty much instantly. They have a very distinctive look. You are not going to get them confused with anything else.
Compare that to, say, Mobile Suits. The Gundams all look alive, so that makes them easy to spot, but once you get into grunt suits and shit you can mix them in with robots from other series and only a dedicated fan is going to be able to pick them out.

The Eva doesn't actually benefit from the pilots being traumatized. Its just that the act off piloting an Eva is kind of traumatizing, so all of the Eva pilots end up a mess eventually. Nerv could find a way to make their lives less hellish, but they have more important things to worry about on a day to day basis, and Japanese culture doesn't like to talk about mental health issues anyway. Suffer in Silence, thats the Japanese way!
Seriously, the reason there are no therapists in Eva is because in the 90s you were more likely to run into a black person in Japan than a psychotherapist.

The way I understood it, the more distant a pilot is from other people, the stronger the AT field he or she projects since AT fields represent the "barriers between people" or something. The Evas also clearly rely on the pilot having an extreme, probably unhealthy attachment to the soul within the Eva to achieve high sync rates

That, and I always got the impression that Nerv seriously thought they were going to have the S2 organ done in time. They knew it was possible, they had 15 years. This power supply problem was something they were going to solve.
And then they kept not getting a working one, and as they got to just a few years before the Angels showed up they realized they needed a backup plan.
Going by the show, if they had had even one more year (or some samples of an Angel core earlier than Shamshel) the Evas would have had S2 organs no problem. Its a problem they do solve, just not in time for the start of the show.

That's not really how it works. The pilot has to be more open in order to better connect with their Eva, which creates a stronger AT Field to protect them from the enemy. That's why traumatized Asuka had lower synch rates, but when she realized that her mother was the Eva she suddenly could pilot greatly again and even use the AT Field as a blunt weapon.

AT Fields are the definition of the self, not the distance between people. Other than at its most basic aspect of "without it, we would bleed into each other".
Nothing in the show says that being more of a loner makes your Eva's AT Field stronger. Though strong emotional connection to the soul of the Eva does seem to help, since Synchronization Ratio is basically mathematically quantifiable love.

One of the things to remember with Eva is that the situation was actually steadily improving for Shinji early on. Yeah, he was getting hurt a lot, but after Ramiel they got out of most fights pretty much pain free - Jet Alone did no damage, Gaghiel had both pilots get out fine, the first Isafel fight was a loss but the pilots were fine and they no damage cleared the second, Sandalphon was close to a disaster but ended up pretty well in the end, Matarael was a fucking pussy (Asuka got acid burns, but she didn't seem too injured by that), Sahaquiel probably strained their back muscles at most - and hell, Shinji got congratulated by his dad! - and the pilots never fought Ireul.
Then Leliel came along and reminded everyone that Evangelions were FUCKING HORRIFYING, Bardiel nearly killed three pilots and freaked the fuck out of Shinji, Zereul was fucking invincible, and, in someone else's words, "Arael took Asuka's mind, Armisael took Rei's body, and Tabris took Shinji's soul".
Had things gone in the last few like they did for the middle few, Evangelion would have ended on a much higher note.

They stand out more than any other mecha, and show the fusion of organic and mechanic along with their supernatural monstrous nature perfectly.
