If you've already seen Escaflowne, you should just stop there. It's the only good fantasy-mecha worth your time watching. Everything else that would fit the bill is just pure anime fodder that you'll probably drop by the fifth episode.

I dunno if you can really call that fantasy, actually. It's more Darius World being based on the environment of an alien planet, and thus not matching up 1:1 with Earth, everything is pretty high tech.
I had a big list of things that were fantasy with a few "sucked into another world" series that I posted once after a scan through the archives for the purposes of fantasy SRW, but then the archives got nuked and it's gone now.

I dunno, it fits pretty well. It hits a lot of the 'trapped in another world' fantasy tropes, even in spite of its tech level.

Aside form the ridiculous noses, I rate Escaflowne as one of the highest quality anime I've ever watched. The story, the characters, the animation, it was all good-to-great the whole time. They even managed to not make the love triangle insufferable. Ending was a bit weak, but the journey was amazing.
