I've been interested in it for a while and want to pick it up but I've been having trouble deciding what series to start as of late simply because there are so many, franchises notwithstanding.

Loved the original series, the OVA and Sins were alright. Hated the movie.

The OVA is terrible, but Sins is pretty darn fun. I need to see the original.
OVA is horrible, Sins is its own stuff and the original series is very good and still hold its own after many years thanks to wonderful art and backgrounds.
Amano designs with Yoshida were the greatest thing about Tatsunoko series to me, the way they blended japanese and western art together is great.
It's also a pretty dark series except for some minor gags.
Is it casshan or casshern?

It's whichever sounds better to you. Tatsunoko never decided on one romanization or the other.

Remake is one of my favorites. I've also watched the original series, it is good too, but less poetic and beautiful, with no philosophical undertones. I admit I laughed hard at some moments that looked ludicrous because of old animation.
