Malazan, LoTR (Silmarillion and The Hobbit by extension), Riftwar Series (Start with Magician, read "essential" book through to Magician's End under the Crydee.com alternate order. It's like 20 books long).
Other than that, it's all shit. A good fantasy book is hard to find, especially if you like a series. MAYBE, The Axis Trilogy. It's a personal favourite of mine, but I understand why many aren't fans. It's better if you read Douglass' entire works in that universe (Wayfarer Redemption, Threshold, Darkglass Mountain, etc).

I would definitely recommend the First Law trilogy by Joe Abercrombie.
Lesser books I can recommend would be Eragon, Dwarves, and Lamb (next on my reading list)
Just read Gene Wolfe. Most everything by him is great.
All other fantasy and sci-fi writers are pretty garbage honestly. Kinda sucks growing up with a penchant for fantasy and sci-fi but having so little quality material to read.
