This, as well as select Discworld novels. It's not fantasy, but Clarke's Rendezvous With Rama has a very dungeoncrawl feel to it (it's about exploring a huge abandoned spaceship)
Perdido Street Station/The Scar both have elements to them, China Mieville is a big D&D fan, I think there's even a sly nod in PSS to people only interested in "gold and experience". He polarises a bit but he's not conventional fantasy and gets reviewed and rated by Literary Fiction outlets (take that how you want)
