Proverbios Morales by Sem Tob de Carrión
Libro del Caballero Zifar
La celestina by Fernando de Rojas (Very recommended)
Dança General de la Muerte (If you're interested in this kind of books)
Coplas a la muerte de su padre by Jorge Manrique
El conde lucanor by Don Juan Manuel (Very recommended)

I suppose that some of these books won't be so interesting if you're not interested in medieval literature, but if you are it's a good period. Medieval spanish is also not too difficult to read if you have a good level of spanish. Catedra is a good editorial with some nice introductions for the texts.

Spain has top tier poets and playwrights, but most of you read only novels.
We have not been so proficient writing novels, but we still have a few authors that are better than some mediocre writers that are constantly shoved up our throats just because they wrote in English.

I acknowledge that Spanish literature is not as good as it used to be, but c'mon, don't be so smug about it, we have had very talented writers.
