curry and gumbo can be made very similarly actually. most curry starts with a paste, but it can be skipped and you can just use more roux. mix butter and flour in a pan and cook it till its a light brown/darkish yellow for curry or a really dark brown for gumbo, add chicken stock, then add fruits and veggies and curry powder for curry or veggies for gumbo, then add meat, then add filee powder if doing gumbo. not the best most authentic method, but super easy and quick if youre just starting.
