Me personally? Nothing, it would be impossible for me (a dyel manlet) to beat a knight who has trained from child and has 3x my mass and full armor. Nobody here could, I reckon. Maybe bolas connected with a chain to wrap his legs together and trip him before delivering a coup de grace? I'd need a lot of practice beforehand.
Now, if I were a knight who had combat training? I'd pick a pole hammer to give me more reach and aim for his legs. If I had enough space I'd try to smash them to crumple the armor and impede his movement, or if he was too quick I'd make stabs at them while sidestepping out of his field of vision (which is limited thanks to his helmet).

Pole-axe + rondel dagger I guess? Seems to be the only logical way to go here. The only way you are going to defeat him is by using the leverage/reach/etc. of the poleaxe to someone get him on the ground and then frantically try to sneak the rondel blade between some armor to kill him before he destroys you.
This is assuming I also am wearing full plate.

If it was just a knight in plate then my answer would be the same but it wouldn't be 'I guess' it would be 'definitely'. The fight itself would involve a bit more intricacy I guess though as it wouldn't AS MUCH of a mis-matched, desperate struggle against an almost invincible foe.
