Probably because its run by the same family and they are doing stuff from scratch vs using a food supply service. Same shit happened with chinese food, I had this place in town that was around since the 50's and they made egg rolls the size of coke cans with a really cripsy shell instead of those soggy things that are essentially china-sysco that every Chinese place has. Now even indian food is getting this way.
