Plain Jane Colt 1911 Government 799 most shops, get money in the pocket use it to modify.
Get the Glock 21 or Glock 41 if you want something a bit different.

FNX 45.
It carries 15 rounds of 45 acp, reliable, and you should be able to buy one for 650 and under.

P227 with E2 grips is nice when it has the 'Fat' trigger
HK USP45 Police tradein can be had for cheap, and add a hogue handall and it feels amazing
Colt 1911 is nice, but only 8+1
G21 is a bit big and uncomfortable, and I really like Glocks in general, just fyi.

Ok OP in all seriousness I have A Sarsilmaz K2, and it's a bretty gud gun for the price as long as you don't mind giving your money to Turkroaches. The barrel and guide rod are stainless steel, so if you are innawoodsing, it would be ok with a little dampness. The only real drawback I've found with it is besides having a safety rather than a decocker, it's hard to find a good holster for it.
I do CC a 1911 because of its thin profile, but I would only get one if you're sure it's what you want. Mid-tier 1911s from Springfield or Colt start around $700 retail.
The last thing I'll say is that I also own a CZ 97B, but I consider it more of a safe queen because it has the blued finish, and it's also really hard to find holsters for it. It also comes in a less-ornate decocker configuration called the CZ 97BD. I don't know if they still make the one I have, tbqh family.
