my favorites are elmax and cpm3v
My edc is Sandvik 14C28N and it's a well made knife, I like the way the steel performs and it's more than adequate for my uses.

Anything properly heat treated.so definetly nothing from zt.
440c and s30v.

I haven't ventured into higher end knives yet, most of mine are mid level 8Cr13Mov steels

I like steels that will take and hold an extremely high initial sharpness, and which work well at low edge angles:
ZDP-189
CPM-M4
HAP40 (Japanese steel similar to M4)
Aogami Super Blue
High hardness 1095 and 52100
These all work well for my EDC use.

Ha, well, not quite! To be perfectly honest, none of the stuff I do is particularly technically challenging.
The challenge is figuring out the methodology because so much of the information online about sharpening ranges from misguided to deliberately counter productive.
