Can someone explain the importance of jet engines and why china seemingly is having such problems developing them for their new jets?
Jet engines are nut just plug-and-play. They are sensitive to airflow in many ways, especially on supersonic jets. If not properly designed, jets can actually blow out if the incoming airflow is going too fast, or coming in at the wrong angle, or many other things. Since fighter jets go fast and fly at odd angles, you can see why this might be an engineering problem. The problem includes designing the ducts and intakes to control that airflow as well. The F-14 for example was notorious for having an extremely narrow flight envelope due to it's sub-standard engines (they were later upgraded though).

in my experience working with Chinese corporations: they can make the most sophisticated things, but have a much larger variance then western companies. This means that in products which require thousands of different parts within very limited tolerance windows, such as jet engines, Chinese corporations simply cannot reliably make them. Hell when we contracted out we got one part which was within a micron of what we specified and the other 49 were between 1 and 50mm off.
TL:DR QC is shit in China, and jet engines are such high stress products that the QC dooms the projects before they begin.

1 micron tol is very tight, far beyond capability of most machining processes today. Also did you mean 50 micros out? 50mm is a factor of 50000 out...
It's more than just quality-control.
You have to have the infrastructure to manufacture sophisticated materials correctly.
They can steal our plane designs but that's a long way from replicating them in practice.

Hi pressure vessels designed to go to 50kbars of pressure with a minimum of sample, (2.1nanoliters). If the sample chamber diameter is off by 1 micron the sample volume is change by 5%. being off by 50 mm, meant the volume was ludicrously big.

It's a serious crime to export super alloys such as inconel and Rene 41 which are mainly used in jet and rocket engines
