Main differences include a lot less armor and a gun not designed to be fired directly. The ammo is different too, no APFSDS in a 155mm.

Sheridan is a cavalry tank. The armor is pretty light but the role is different from an MBT. It's still technically a tank, this is where the idea of role comes to mind. Sheridan is meant to be used like a tank but had to be light and air-droppable. You don't use an M109 like a tank, at least by design.

The way I see it is a tank depends on the purpose of the vehicle. A MBT can be an AFV IFV APC etc all in one and be called a tank safely. I believe tanks are, however, fighting vehicles and need a gun to be classified as such. Rotating or not. The literal definition of tank is "a heavy armored fighting vehicle carrying guns and moving on a continuous articulated metal track." So if its got tracks, its built for fighting, is 'heavy', and has a gun its a tank. On the other hand I suppose you could say if it has any armament turret or not it's a tank since its 'carrying guns'. I honestly think its a word that rests with the person using it to describe one thing or another. It isn't a set in stone word like gun.
