I've carried a 1911 for a year now, it's totally doable. Recently bought a p320 to replace it as a carry gun though.
Deagle brand VP9 with golden clips
Would get fired if my employer noticed and I'm required to keep my shirt tucked. So I pocket carry a Doubletap Defense in 9mm. All other times I carry my shield with Ameriglo night sights in a comptac MTAC IWB holster.

I won't lie, it's pretty bad in some ways. But it's got a very thin profile, it's relatively cheap, and comes in 45 if you are into pain. The bad is that it's got a long 15 pound trigger, non existent sights, the barrels are unregulated so the impacts are inches apart at just 15 yards, and it's a thin metal grip on a light gun that makes even 9mm hurt to fire. If you need deep concealment stick it behind your wallet.

I wouldn't do an Officer 1911.
It was designed only as a full-size gun, once people make it that small they become very finicky and much less reliable.
With a 1911, Commander-size is generally the lowest you should go IMO
