This is as good a thread as any to ask:
Why is this still the preferred touhou fighting game? Two have been released since then, right? While obviously newer doesn't mean better I never played the fighting games so I'm curious as to why things are like this.

The Touhou fighting games are unique from other anime fighters because each one plays drastically different from the other. (Exception being Hisoutensoku and SWR) Most anime fighters will keep up a consistent style of play, even if the mechanics and combos change, but that's not the case with Touhou. Because of this, people either never adapted to the new games or never wanted to adapt. Hisoutensoku was also released during the "golden age" of Touhou popularity so a lot more people played it.

They're very casual and all of them except IaMP have mechanics that play with RNG or are unconventional for serious fighters. (IaMP controls like shit though and has one of the most awkward setups for any fighter I've ever played.)

Along with what others said, Hopeless Masquerade was seen as a step down mechanics and control-wise from Hisoutensoku and wasn't even finished when it was first released. While later versions of HM and Urban Legend in Limbo are better, the new series just hasn't really recovered from the initial reception

Basically been answered already, but I'll add my 2c.
Shit's hilarious. The cute little characters throw each other around like basket balls. The absence of voices only adds to the game strangely enough.
And Reisen's drink super is the greatest thing ever.
