She's a tapir. This isn't up for debate, Baku are supernatural Tapirs in Chinese and Japanese mythology.

Actually, they're lion-horse things that coincidentally look like tapirs, to such an extent that when actual tapirs were found they were named after baku (rather than the vice-versa).
It's like how kirin is supposed to be a weird scary horse and giraffes were named after it because they're also weird scary horses, or how vampire bats are called vampires because they happen to drink blood.
