That's actually decent progress, and it's common to hit a wall at around that level. You'll need to develop better muscle memory before you can start working on harder 8s and 9s, which takes different amounts of time for different people. Play new charts constantly, play old charts on random, practice difficult patterns between songs, etc. and progress will happen eventually.
And while you're at it, learn to use all of your fingers and your thumbs.

Practice alternating feet on easy songs (unless it's the same arrow twice in a row of course).
If you get something like this : ←↓→↑, do a 135° turn counter-clockwise on the → on your left foot so you can get the ↑ with the right one and still be alternating feet.
It's something that won't work on harder songs because it's slow to pull, but being in the mindset "always alternate" makes it easier to practice crossovers.
Every diff of Butterfly 2008 x-edit is good to practice.

Second, how is "overmapped" bad?
Just because you can't play high density charts doesn't mean they are bad. They actually make a lot of sense when you actually play them.
BMS also offers a continous challenge, unlike IIDX; when you hit 12 you'll just keep grinding the same songs all over again for slightly better accuracy.
