Up until now I've ignored defense on the first row of the discard pond, start taking mental notes on possible opponent hands, and go betaori on the 3rd row unless I'm close to tenpai or better.

Those are pretty good basic principles.

I also assume opponents are in tenpai when
1) someone has called two or more times and it's past the early stages
2) someone calls late in the round
3) someone cuts an honor tile or live/dangerous tile from their hand late in the round.

If I'm not iishanten by the end of the second row of discards, I fold if I draw a live tile.

A dora pon also counts as a riichi to me, start folding immediately unless you have an iishanten/tenpai hand with good value, and be quick to give up if it doesn't progress soon.

For open hands look for obvious yaku and the potential that the guy who opened it might have 2 dora ready to call or might already have 3dora closed.

You basically want to keep an eye on the point difference to see what kind of hands people will be aiming for, keep track of what the dora is (whether it's a honor tile that could be easily roped in on a toitoi or honitsu) and work from that. For a honitsu just don't deal tiles in that suit. For a toitoi go for tiles that you can see the most of, and that obviously aren't close to the edges (1,2,8,9) or live honor tiles.

And at all times you should consider your own hand's value to see whether it's worth it to push or to just fold. Generally for less than 3 han and with a high risk situation, unless I'm the dealer I'll just fold. On the contrary, if everyone's keeping it closed without riichis, and all the dora and plenty of honors are on the table, I might push just to hit tenpai on a draw situation.

There are some indicators for when someone is in, or close to tenpai. Open melds for example, obviously. If someone has two or more, chances are good he's in tenpai. If someone has two open melds I will usually defend if I'm not at least in tenpai with a low value or in isshanten with a mid-value hand. Early middle discards, especially red 5s often indicate a fast hand as well, since Chanta is pretty rare. It's also important to estimate how valuable your opponents hand could be. If he likely just has a tanayao or yakuhai and you can rule out that he has dora you might as well attack if your hand is decent, if he has no or very few discards of a certain suit he likely goes for honitsu/chinitsu and you should defend earlier etc.

Aggressive is awfully vague, while 3 sou is an unwanted tile and is extremely likely to be isolated even if you keep it. Discarding the dora would be a total blunder with that hand.

Even though the Pei is the dora and thus highly valued/wanted, it's a better defensive tile than 3 sou because it's harder to wait on.

Also, you would never discard a live dora while being defensive in the late round, making it much worse than 3s for betaori, whereas if the pei were discarded by other players it would lose value as a potential pair. Maybe I value speed too much, but I think it's not worth the tradeoff in this case.

If I was smarter with my discards it might have been a tsumo by the time I drew the 6 pin. But I banked too much on the 246p shape, which never filled up since I never drew a 3p or a 5p, and discarding the then-floating 3m and 7s backfired.

Toupaiou for example let you use a custom avatar. JRM, before it changed, let you use those little dress-up avatars and pick voices and such. Little customization bits add a nice, personal touch. It's a pretty minor and unimportant feature in the grand scope of things.
