In my view it's just adding another dimension to the music.
There's a first layer which is purely sounds and harmonies, from which you'll use your imagination to give it a story/context.
Then the artist can use the lyrics to explicitly tell the listener how his music should be interpreted, which emotions he wants to convey. There also can be an extra dimension if the lyrics are written in a particularly poetic/literary way.
Most of the times I find this first layer to be enough, since I prefer using my imagination than being told how to feel. But it can also be nice to let the artist tell you how he sees the music he has written.
That's also why I find instrumental music to be great, you're not told how to interpret it, that's up to you.
