I had a mentor of sushi prepare a fish, live eel once and it was twitching on the plate. It was an amazing experience to watch a masterful precise act of knife and preparation. What you must learn is that cooked does not mean heat and a long time. Cooked also mean very fresh and with minimal seasonings. To enjoy the food you must get the flavour of the food and not destroy it with spice. The Chinese are the extreme of the other end. The European are the middle case. The Japanese are the other end. They appreciate the raw flavour. You probably do not.
